Rotisserie Chicken Rice Bowl
Dinner in under 10 minutes, no actual cooking required. Pick up a Costco rotisserie chicken on the way home, grab two pouches of Trader Joe's organic brown rice or Ben's Original Ready Rice, and you have the whole foundation sorted before the kids finish washing their hands. Frozen corn microwaves in two minutes and adds sweetness kids go for.

How to make it
Microwave the rice according to package directions.
Microwave frozen corn for 2 minutes.
Shred the rotisserie chicken into bite-sized pieces.
Build bowls: rice first, then chicken, corn, and avocado slices.
Top with salsa and any other toppings you like.
Toppings turn this into a build-your-own bowl situation, which kids love. Set out sliced avocado, salsa, shredded cheese, or a squeeze of lime and let everyone customize. The chicken stretches across four bowls easily and often leaves enough for tomorrow's lunch.
Swap the corn for frozen edamame or black beans for more protein. Sub cauliflower rice if you want to cut carbs. Sour cream, Greek yogurt, or a drizzle of Trader Joe's green goddess dressing all work well on top.
