Rice and Beans Bowl
This is a legitimate dinner on a low-energy night, fully plant-based and ready in under five minutes. Two pouches of Trader Joe's organic brown rice or Ben's Original white rice go in the microwave while you drain and rinse two cans of 365 black beans or Goya pinto beans. A pinch of cumin and a squeeze of lime over the beans is all the seasoning you need.

How to make it
Microwave rice pouches according to package directions.
Drain and rinse canned beans, then microwave for 2 minutes.
Season beans with a pinch of salt, cumin, and a squeeze of lime.
Build bowls: rice, beans, avocado slices, and salsa.
Add any other toppings and serve.
Set out a toppings bar with jarred salsa, sliced avocado, and shredded cheese if you want to add dairy. Kids can pour their own salsa and arrange their bowl, which buys you a few minutes of peace and actually increases the odds they eat it. The whole thing costs well under ten dollars for a family of four.
Swap black beans for canned chickpeas or kidney beans if that is what is in the pantry. Top with corn, pickled jalapenos, or a spoonful of plain Greek yogurt instead of sour cream. Leftover chicken or a fried egg on top makes it heartier for bigger appetites.
