Peanut Butter Banana Toast

Toast plus peanut butter plus banana is one of the fastest real-food breakfasts you can put in front of a kid -- two minutes of active time, and the toaster does most of the work. It holds enough fat and carbs to carry kids through a full morning without a mid-morning crash.

Peanut Butter Banana Toast
Make ahead: Slice bananas the night before and store in a sealed container with a squeeze of lemon juice to prevent browning.

How to make it

  1. Toast bread slices until golden.

  2. Spread one tablespoon of peanut butter on each slice.

  3. Slice bananas and lay them on top.

  4. Drizzle with honey and serve.

Any sliced whole grain bread works; Dave's Killer Bread is a go-to because it has real fiber and protein and toasts well. For peanut butter, Trader Joe's creamy salted peanut butter in the squeeze bottle skips the stirring entirely. Skip natural peanut butter that separates if you want zero friction in the morning.

To bump protein further, use Kodiak Cakes Power toast bread if your store carries it. Almond butter or sunflower seed butter (for nut-free households) swaps in directly. Sliced strawberries work instead of banana if that is what you have. A sprinkle of granola on top adds crunch and kids tend to like the texture contrast.
