Microwave Egg Mug

Two minutes, one mug, no pan to wash -- this is the fastest hot breakfast that still delivers real protein, and kids can watch it puff up in the microwave window which makes it more interesting than cereal. Each serving is two eggs, which puts about 12g of protein on the table before 7am.

How to make it

  1. Crack 2 eggs into a large microwave-safe mug or measuring cup. Add 1 tablespoon milk and a pinch of salt and beat with a fork.

  2. Microwave on high for 40 seconds, then stir edges toward the center.

  3. Microwave again for 20 seconds. Stir. Repeat in 10-second bursts until eggs are just set but still soft.

  4. Sprinkle cheese on top, let it melt for 30 seconds, and serve in the mug.

Any large microwave-safe mug works; a 16oz mug or a standard 2-cup measuring cup gives the eggs room to expand without spilling. Pre-shredded Tillamook or Kraft cheddar melts in the residual heat without needing extra microwave time. The key technique detail is stopping before the eggs look fully done -- they finish cooking in the mug and stay soft rather than spongy.

Diced deli ham or pre-cooked turkey sausage crumbles (Applegate makes a good frozen one) can go into the mug before the first microwave burst. A spoonful of salsa on top after cooking is a quick kid-friendly add. For a dairy-free version, skip the milk and cheese -- plain beaten eggs still cook fine in the microwave with a small splash of olive oil to coat the mug.
