Microwave Baked Potato Bar
Four potatoes, a microwave, and a set of toppings make a lunch that kids will actually be excited to build themselves. Medium russet potatoes from any grocery store work best since they cook evenly; medium Yukons work too and have a creamier texture. Costco shredded cheddar is the easy topping anchor, but set out whatever is already in the fridge and let kids load their own.

How to make it
Pierce each potato 6 to 8 times with a fork.
Microwave on high 4 to 5 minutes, flip, and microwave another 4 to 5 minutes until easily pierced with a fork.
Let potatoes rest 2 minutes, then cut open and fluff the inside with a fork.
Set out toppings bar style so kids can build their own.
Season with salt to taste.
Good topping ideas to pull from the fridge or pantry: canned chili (no-bean or with beans), frozen broccoli microwaved in 2 minutes, salsa, plain Greek yogurt instead of sour cream, or pre-cooked bacon crumbles. For a full protein meal, a spoonful of canned black beans or leftover rotisserie chicken on top turns this into a solid dinner.
