Loaded Quesadilla Dinner
A Costco rotisserie chicken turns this into a 15-minute dinner without any cooking from scratch. Pull the breast meat in the morning or straight from the store bag; Costco and most grocery store rotisserie chickens are already well seasoned so you need very little extra flavor. Kirkland shredded Mexican cheese blend covers the skillet evenly and melts without clumping.

How to make it
Shred rotisserie chicken and season lightly with a pinch of cumin and chili powder.
Lay a tortilla flat in a nonstick skillet over medium heat.
Cover half with cheese, then a layer of chicken, then more cheese, and fold closed.
Cook 2 to 3 minutes per side until golden and cheese is melted through.
Cut into wedges and serve with salsa and sour cream.
For the vegetarian version, swap the chicken for a can of drained black or pinto beans seasoned with a spoonful of store-bought taco seasoning. Add a thin layer of canned refried beans against the tortilla before the cheese for extra hold and creaminess. Sauteed bell pepper strips or frozen corn cooked in the skillet for two minutes before assembly make the meal feel more complete without much added effort.
