Hummus Veggie Pita

This is a real lunch in under five minutes with no stove and nothing to clean up besides a knife. The hummus does double duty as both flavor and the "glue" that keeps the veggies from falling out.

Make ahead: Pack hummus in a small side container and assemble at lunchtime to prevent soggy pita.

How to make it

  1. Slice cucumber into thin rounds and halve cherry tomatoes.

  2. Open each pita at the seam to form a pocket.

  3. Spread 2 tablespoons of hummus inside each pocket.

  4. Stuff with cucumber, tomatoes, and shredded carrots.

  5. Pack hummus on the side if making ahead to keep pita crisp.

Trader Joe's sells a great classic hummus and their mini pitas come in a resealable bag. For the carrots, grab a bag of pre-shredded matchstick carrots (Trader Joe's or any grocery store) and skip the peeling entirely. Pack the hummus in a small separate container for the lunchbox so the pita stays crisp until eating.

Swap ideas: use whole wheat pita for extra fiber; add feta crumbles for a saltier bite; swap the veggies for whatever's already cut in the fridge, like bell pepper strips or snap peas.
