Cucumber Cream Cheese Sandwich
Cream cheese and cucumber is one of those combinations kids gravitate to because it is mild, cool, and a little creamy without being heavy. It takes five minutes and the ingredients cost almost nothing.

How to make it
Spread cream cheese generously on all slices of bread.
Slice cucumber into thin rounds, about an eighth of an inch thick.
Layer cucumber slices on half the bread slices.
Sprinkle with a pinch of dill if using.
Top with remaining bread slices and cut into triangles or fingers.
Use whipped cream cheese from Trader Joe's or any store brand for easy spreading straight from the fridge. English cucumbers are worth the extra dollar because they have thinner skin and fewer seeds, so you can skip peeling entirely. Cut the sandwich into fingers or small triangles and they pack and eat more easily for younger kids.
Swap ideas: add a thin spread of everything bagel seasoning over the cream cheese for more flavor; use a soft brioche sandwich bread for a slightly richer version; layer in a few thin slices of radish for a peppery crunch.
