How to make it

  1. Toast bread in the toaster.

  2. Halve avocados, scoop flesh into a bowl, and mash with lemon juice and salt.

  3. Spread mash on toast and serve.

Costco sells bags of Hass avocados that ripen staggered across the week, so you're rarely without one. Squeeze a little lemon or lime from a bottle — the bottled stuff works fine and skips the cutting. Any sturdy bread works; Dave's Killer Bread holds up to mashing without getting soggy, and kids like it because it's slightly sweet.

Top with a fried egg to make it a real protein meal. For kids who want more flavor, add a sprinkle of everything bagel seasoning (Trader Joe's makes a good one). To stretch it further, spread a thin layer of cream cheese under the avocado — it adds creaminess and protein without extra work.
